Fall Time Favs!

It is officially fall, you know what that means, Spooky Season Treats! A huge Fall and Winter time tasty tradition I love is gingerbread cookies. They are super yummy and great to eat while cuddled up by the fire. Today I will be sharing my gingerbread cookie recipe, and how I put a fun twist on it for Fall.


 

Recipe: Gingerbread Cookies


Ingredients

  • 3 cups of flour

  • 3/4 teaspoon cinnamon

  • 1/2 teaspoon allspice

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter(softened)

  • 1/2 packed brown sugar

  • 1 teaspoon baking soda

  • 3/4 teaspoon ginger

  • 1/2 teaspoon cloves

  • 1/4 cup veggie shortening

  • 2/3 cup molasses

  • 1 egg

Directions

  1. Mix flour, baking soda, cinnamon, ginger, allspice, cloves, ands salt into a bowl and set aside.

  2. Beat together butter and shortening until light and fluffy. Add brown sugar and beat molasses and egg in slowly.

  3. Once fully combined slowly add flour mixture in spoonfuls at a time until dough is formed. Take dough separated into two discs wrapped in plastic wrap and refrigerate overnight.

  4. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.

  5. Place dough onto floured surface and sprinkle with flour. Roll out to desired thickness (Keep in mind the ticker, the longer it bakes for), I suggest 1/8" thick.

  6. Use different cookie cutters with cool and funky shapes for fun vibes. Place cookies 1 inch apart.

  7. Bake for 10-12 mins or until ends brown, then transfer to a rack to cool.

  8. Decorate and enjoy!:)


 

I decided to shape my cookies in an Autumn themed way. I cut pumpkins and a few different leaf shapes. I made a quick googled icing from powdered sugar, milk, almond and vanilla extract, and agave nectar. Made some cool colors and had some fun with it.
